Use & Care

Smooth surface of the iron wok is easy to clean.
Wash with hot water, wipe dry.
After use, hand wash with hot water, dry, and apply thin oil layer to prevent rust.


• How to re-season?
Step 1. Wash the wok with hot water, clean with a sponge brush, and dry on low fire.
Step 2. Use raw fat pork to wipe it until oil covers it.
Step 3. Repeat step 2 & 3 for better seasoning.
Step 4. Wash the wok until the pork no longer turns black, dry it on a small fire, and apply oil to finish.

How to Choose the Right Paella Pan?

When selecting the perfect Paella Pan, consider the following factors:

Material: Opt for traditional carbon steel for authentic flavor development, or choose stainless steel or cast iron for durability and ease of maintenance.

Size: Determine the size based on the number of servings you intend to prepare, with common sizes ranging from 8 inches for personal use to 18 inches for larger gatherings.

For 2-4 servings: 14-16 inch pan is recommended for even cooking and socarrat development

Larger pans for more servings but avoid excessive depth to ensure even cooking

Design: Look for a pan with a wide, shallow shape to facilitate even cooking and the formation of the prized "socarrat" layer.

How to Clean A Paella Pan?

To clean a paella pan based on different materials, follow these methods:

Polished Steel: Soak in soapy water or heat gently, then dry and oil.

Stainless Steel or Enameled: Soak or heat, use vinegar solution for rust.

Cast Iron: Wash with oil to prevent rust.

Carbon Steel: Season with oil, hand-wash without soap, dry thoroughly.

How to Season A Paella Pan?

Not all types of paella pans require seasoning; the need for seasoning primarily depends on the material of the pan. Polished steel, cast iron, and carbon steel paella pans benefit from seasoning to maintain efficiency and durability. On the other hand, stainless steel paella pans do not require seasoning like their counterparts.

Polished Steel: Coat with high smoke point oil, bake at 350°F (175°C) for an hour.

Stainless Steel: No seasoning required.

Cast Iron: Clean, apply oil, heat, wipe excess, store properly for efficiency.

Carbon Steel: Coat with oil, heat on flame/stove, avoid soap, dry thoroughly to prevent.
