The Japanese Deba knife is thick, wide, and ultra-sharp, primarily used for coarse processing of whole fish, such as precise fish head cutting, bone removal, gutting, and filleting.
Skilled artisans hand-polish the blade to a 12-15° single bevel mirror finish, resulting in a smooth, shiny, and razor-sharp slicing surface that facilitates horizontal separation of meat and bones, while allowing for airflow and preventing sticking, thus preserving the freshness and flavor of the meat.
This 7-inch razor-sharp Deba knife is made of high-carbon stainless steel, specifically 5cr15mov, with a hardness of HRC 56-58 and sharpness rating of 80-100. The iMarku Deba knife is meticulously crafted, possessing incredible hardness, flexibility, and corrosion resistance.
